The next stop on our tour is mini tofu quiches! When choosing these recipes, my main goal has been variety. I want to show several ways one can enjoy tofu, even when one of the steps is to blend it into a purée. That’s not very appetizing to think of but bear with me because this recipe does not disappoint. I’d say these quiches are one of those recipes that you could set down in front of someone and they wouldn’t know the difference between it and the real deal.
To create these delicious masters of deception you’ll need…
- Olive oil
- 1 tsp minced garlic
- 1 tsp rosemary
- 2 tbs nutritional yeast
- 1/2 tsp salt
- 1/4 tsp onion powder
- 1/4 tsp turmeric
- 1 tbs potato starch (or cornstarch)
- Black pepper to taste
- 1/2 cup chopped yellow bell pepper
- 1 cup chopped mushrooms
- 1/3 cup chopped green onion
- 1 block of firm Silken tofu
- 1/4 cup soy milk (or regular milk if you don’t need the recipe to be vegan)
- 12 cup muffin pan
1. Preheat the oven to 375 degrees
2. Coat the muffin pan with olive oil or any non-stick spray
3. Sauté the vegetables
Drizzle a little bit of olive oil in a skillet and sauté the garlic, bell peppers, and mushrooms over medium heat for 2-5 minutes. Stir in the onion, rosemary, and black pepper. Remove from the heat and set aside.
4. Blend the Tofu
Dump the tofu, nutritional yeast, turmeric, soy milk, cornstarch, and salt into a food processor and blend until the consistency is smooth. It’s important that you get silken tofu so the quiches will hold their form. If you get the right kind blending up these ingredients will take a matter of seconds.
5. Combine
Pour the mixture into the skillet and stir together with the vegetables until fully combined.6. Divvy it Up
Divide the mixture equally between the 12 muffin cups. The mixture should fill 12 cups about half way.7. Toss it in the Oven
Put the muffin pan into the oven and immediately reduce the heat from 375 to 350 degrees. Bake the mini quiches until the tops are golden. Insert a knife or toothpick into the middle of the quiches to make sure they’re done before removing them from the oven.
8. Enjoy!
Let the quiches sit for 5-10 minutes before serving them and then dig in!Want more tofu recipes?
